New Zealand standard measuring cups and spoons have been used in these recipes. Where possible the most convenient measure for an ingredient has been used and all measurements are level.

American measures are so near NZ ones that it wont alter the recipe significantly to use them.

STANDARD MEASURES
1 cup    = 250 ml
1 litre    = 4 cups
a pinch = the amount that can be pinched between the thumb and first finger
1 tsp     = 5 ml
1 Tbsp  = 15 ml or 3 tsp

Note: The Australian tablespoon measure = 20 ml or 4 tsp

METRIC CONVERSION CHART
25g  = 1 ounce
125g = 4 ounces
225g = 8 ounces
500g or ½ kg  = 1 pound
1 litre = 1¾ pints

LENGTH EQUIVALENTS
1cm      =  ½ inch
2.5 cm  =  1 inch
5cm      =  2 inches
20cm   =  8 inches
23cm   =  9 inches
25cm   =10 inches

Oblong pan   18 x 28cm  (7 x 11 inches)
Swiss roll tin 20 x 30cm  (8 x 12 inches)

Ring tin          20cm  (8 inch)

EQUIVALENT OVEN TEMPERATURES
150ºC = 300ºF
160ºC = 325ºF
180ºC = 350ºF
190ºC = 375ºF
200ºC = 400ºF
